His love for food and passion for perfection in the industry is polarising and divisive. But like all good chef's, the outspoken irishman now living in Sydney, Australia always manages to back it up.

He's here to share his inspiring story around growing up in Dublin, Ireland where his passion for food all began before he headed to London to work in some of the most profound Michelin Star restaurants back in the day where the only rule was "do your job and do it perfectly" or suffer the consequences.
